I teach a meal-making class in my hometown. People who come to my class are from different walks of life. Many just enjoy making food and appreciate the community it brings. Others are genuinely wanting to learn and get a better grasp on being able to put together a meal for their family. There are those who are new to Canada. They may be unfamiliar with many of the ingredients they see in our grocery stores and want to learn how we use those foods. Some are looking for ways to connect and make friends, or want to work on their English speaking.
When creating recipes for these meals, my focus is first on using common, affordable ingredients. I want to show people how easy it can be to turn simple items into something delicious.
The idea for this quick and easy rotisserie-style chicken came from a gap I noticed—I couldn’t find the kind of recipe I was looking for. I wanted the flavour and tenderness of the store-bought rotisserie chickens, but in a version I could teach in class. Something people could recreate at home without much fuss.
The benefits? It costs less, and you know exactly what's going into it.
After this chicken is cooked, it is very versatile.

Ways To Serve Quick and Easy Rotisserie-style Chicken
We enjoyed this chicken by shredding it and putting it on a warm corn tortilla topped with some quick pickled onion, some seasoned sour cream and potato wedges on the side. Everyone really loved them.
It could also be served with rice and steamed vegetables, or a salad.
There are so many options!
It would also make a good alternative to having turkey for thanksgiving, Christmas or other holidays.

Seasoning Mixture
If you plan to make this recipe again, you could prepare a bulk amount of the seasonings to store in a jar. Then it would be handy to use each time. So for 8 bone-in, skin on chicken thighs or breasts, you would need approximatley 1/4 cup of seasoning blend.

Preheat oven to 400°F (205°C).

Pat the chicken breasts/thighs dry with a paper towel.

Sprinkle the seasoning mixture over each.

Drizzle olive oil over them and rub well.

Place chicken pieces in a baking pan.

Bake for 30 minutes.

Reduce the heat to 375°F (190°C) and bake for 20 minutes more until tender when poked with a knife.

Remove from oven and cover with aluminum foil until serving time.

1 tablespoon sugar
1 tablespoon smoked paprika
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon poultry seasoning
1/4 teaspoon celery seed
1/4 teaspoon ground thyme
1/4 teaspoon ground rosemary
1/8 teaspoon cayenne pepper
1/8 teaspoon turmeric
