From my Mom's Kitchen: Little Red Hen Bread Recipe

Growing up in a busy house with six kids, there was always something going on—and something always baking in the kitchen. One of my favorite memories is hearing my mom say, Guess I have to be the Little Red Hen. That simple phrase meant something wonderful was about to happen: she was making fresh, homemade bread. We knew it wouldn’t be long before the house filled with the smell of warm loaves baking, and we’d be treated to that weekly delight—a thick, soft slice of bread still warm from the oven, layered with honey.

Now that I’m a mom myself, I find so much joy in carrying on that tradition. There’s something really special about baking from scratch, especially when I know my family is just as excited about it as we were growing up. I love that I can make something nourishing and homemade—and that the simple act of mixing, kneading, and shaping dough brings the same kind of comfort and connection to my own kitchen.

This little red hen bread recipe is soft, hearty, and holds up beautifully for toast, sandwiches, or simply warm with honey. Here's the treasured recipe we've come to love.

Flour

I use freshly milled whole wheat flour for the nutrition and rich flavour and I prefer organic white flour

In a large mixing bowl, combine all ingredients except the flour and only half of the whole wheat flour. Let the mixture rest for about 5 minutes to allow the yeast to activate.

Gradually add the remaining flour (both whole wheat and white), a little at a time, until the dough comes together.

Knead the dough for 5 minutes—either by hand or with a mixer and dough hook. Transfer the dough to a greased bowl, cover it, and let it rise for 1 hour in a warm place.

Punch down the dough, then shape it into 3 large loaves or 4 smaller ones and place in greased loaf pans.

Let the loaves rise again for 45 minutes or until nicely puffed.

Bake at 400°F for 22 minutes, or until the tops are golden and sound hollow when tapped.

3 cups very warm water

4 ½ cups whole wheat flour

2 to 2 ½ cups white flour

½ cup ground flaxseed

¼ cup olive oil

¼ cup honey

1 egg

¾ tablespoon salt

1 ½ tablespoons yeast

1 ½ tablespoons lemon juice
