Best Protein Packed Pumpkin Spice Muffins

It's the season for all things pumpkin!

My daughter asked me to make a Pumpkin muffin that would be high in protein.


I perused the internet to find one that would taste great and still check all the boxes: low sugar, high protein, fiber, just enough spice, and still tastes like a muffin - not cardboard.

So after not being able to find exactly what I was looking for, I pieced different recipes together and created this.


This Protein Packed Pumpkin Spice muffin is (IMHO) the best and has approximately 8 grams of protein per muffin! It is lightly sweet, and has a moist, fluffy texture.

It makes a great on-the-go breakfast or snack.

It is an excellent source of Vitamin A from beta-carotene, and also contains moderate amounts of Vitamin C. Add in pumpkin seeds if you are wanting ways to boost iron intake.

Optional Additions

Feel free to add more or less maple syrup to sweeten these muffins.
It will depend on your taste, but also, whether or not the protein powder you choose to use is sweetened.

Chocolate Chips, Pumpkin Seeds, Nuts

These added ingredients add a little more delight to these tasty, protein packed muffins.
I would recommend around 1 - 1 1/2 cups in total of optional additions.

Preheat oven to 400° F.
Line a 12-cup muffin tin with paper or parchment muffin liners.

In a medium sized mixing bowl add all the wet ingredients.
Mix together.

In a smaller bowl, using a whisk or fork, mix together all the dry ingredients.
Then combine the wet and dry ingredients together.

Fold in chocolate chips and/or pumpkin seeds as desired.

Scoop the batter in to the prepared muffin tin.

Bake for 16-18 minutes or until muffins are golden and bounce back when tapped on the top.

Remove from oven and allow to cool slightly before transferring muffins to a cooling rack.

Instructions

1 cup pumpkin puree

2 large eggs

3/4 cup greek yogurt

1/4 - 1/2 cup maple syrup

Wet Ingredients

1 1/4 cup oat flour

1/2 cup vanilla flavoured protein powder

1 1/2 teaspoons cinnamon

1 teaspoon pumpkin pie spice

1 teaspoon baking powder

1 teaspoon baking soda

Dry Ingredients

Chocolate chips

Pumpkin seeds

Nuts
