The Best Pancakes

Pancakes are probably the most requested food item by my 4-year-old son and they have been for a while now. And so, I’ve tried a few different recipes and made my own adjustments to make the best one. Now, we have our staple pancake recipe that I’ve honestly probably made at least a hundred times. It’s quick and easy and I even have it memorized now! We’ve shared these over birthday breakfasts, family brunches, and camping trips. We eat them for breakfast, lunch, and supper (I even remember making them for a late night snack one time when I was craving them during my first pregnancy).

I also love how versatile they can be for a celebration meal. We’ve celebrated various days simply by adding some special things to our pancakes. I’ve added green food colouring for St. Patrick’s Day, red for Valentine’s Day, whipped cream and strawberries in the shape of Captain America’s shield for my son’s birthday. You can change it up by adding chocolate chips or switching it up with blueberries (although I think my family would be disappointed if they didn’t get their chocolate chips). In our home, the favourite toppings are whipped cream, strawberries, maple syrup, and bananas. Nutella, peanut butter, butter and maple syrup, and other fruits are great options as well. My husband even likes putting yogurt on his pancakes!

Searing the Beef
Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles
Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling
Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Mix the dry ingredients.

Add in the wet ingredients and mix well. Let it sit for 5-10 min, until the batter is bubbly.

Pour onto a hot griddle/pan/cast iron pan–whatever is your preferred way to make pancakes! Flip once the top starts getting bubbly. Cook for another 30 seconds-1 minute on that side. Continue until all the batter is used up!

*If you are adding any food colouring, do it before you start making your pancakes. If you’re adding chocolate chips or blueberries, I like adding them to the pancakes once I’ve poured the batter onto the pan to allow for more of an even distribution. However, you can add them to the bowl of batter too*
Instructions
2 cups flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt
2 cups milk
2 Tbsp vinegar
2 eggs
1 tsp vanilla
Optional add-ins: chocolate chips
blueberries
sprinkles
etc.
