Cinnamon Rolls

Who doesn’t love cinnamon rolls…they look and taste like you went to a lot of effort, but they are really quite easy to make, and the smell is so enticing. They are a tastebud pleaser to young and old alike! If you’ve ever tried making bread, you’ll find these rolls put your accomplishments one notch higher as they are so easy to put together.


Here are the dough ingredients you’ll need:


2 cups milk

½ cup cold butter

2 Tbsp yeast

½ cup warm water

¼ cup plus ½ tsp sugar

1 Tbsp salt

3 eggs

6 – 7 cups flour

I like adding a splash of almond flavouring to these icings, for a more pronounced flavour!


Vanilla buttercream

Mix ½ cup room temperature butter, 3 cups icing sugar, 2 tsp vanilla and ¼ – ½ cups heavy cream. Cream the butter until smooth…alternately add the rest of the ingredients until you have the desired consistency.


Cream cheese icing

You can take ½ cup softened cream cheese and add icing sugar until you have a smooth icing.


Icing sugar glaze

If you’re avoiding the extra dairy, another option is to add hot water to icing sugar to make a drizzle (you need very little water to create the icing consistency for drizzling it over top).

Scald the milk in the microwave until almost boiling – watch so it doesn’t boil. Add the cold butter into the milk and stir until it’s melted – cool to about room temperature. In a separate bowl, mix the warm water, ½ tsp sugar and yeast together. Allow to sit until the yeast is bubbly (5-10 min). Pour the milk and yeast mixture into your stand mixer. Add the ¼ cup sugar, salt and eggs and mix until it’s well combined. Slowly add remaining flour or as much as is needed to produce a soft and slightly tacky dough. Remove from the mixing bowl and place into a greased bowl…cover and let rise for about an hour or until doubled in size. Grease 3 – 9×13 inch pans.

Roll the dough out into a 12 x 28 inch rectangle. Brush the dough with the melted butter, spread the brown sugar on top and sprinkle with cinnamon – spread evenly. Make sure to leave an inch strip on the bottom completely bare as you will use this to seal the roll together so they don’t unwind during baking. Use a pizza cutter and cut the dough into 1 ½ inch strips. Roll up each strip and pinch the end to keep from uncoiling. Place 6-8 buns in each pan, as they ‘grow’ quite a bit!

Warm the cream for 30 – 45 seconds in the microwave and slowly pour over each cinnamon roll. If you prefer not to use cream, you could sprinkle the tops with a little extra brown sugar and a small drizzle of melted butter. Cover the pans with plastic wrap and allow the rolls to rise for another 30 minutes.While the rolls are rising, preheat the oven to 375 degrees. Bake for 15 – 20 minutes or until golden brown.

1/4-1/2 cup heavy cream
