If you love the classic combination of peanut butter and chocolate, these Rice Krispie roll-ups are about to become your new favourite treat. Imagine the chewy, buttery goodness of a classic Rice Krispie treat, but with a decadent layer of peanut butter, melty chocolate, and chopped Reese’s cups all rolled into an irresistible treat!

They’re completely no-bake, making them a quick and easy dessert that’s perfect for any occasion. Whether you need a fun treat for the kids, a last-minute party contribution, or just a little something to satisfy your sweet tooth, these roll-ups check all the boxes. Plus, their swirl-like appearance makes them look just as good as they taste!

Things to have ready:
Spatula for scraping your pot
Large bowl
Clean counter
Small bowl of water (for your hands)
Large cutting board or cookie sheet
Ingredients
3 tablespoons butter
1 bag (10 oz) mini marshmallows
Splash of vanilla
5 cups Rice Krispies cereal
3/4 cup peanut butter
1 cup chocolate chips (semi-sweet or milk chocolate)
1 tablespoon coconut oil or butter (for melting chocolate)
1 cup chopped Reese’s cups
Instructions
Prep everything
I suggest starting by cleaning your countertop (you’ll be rolling your Rice Krispie treat on it later), and gathering/measuring out all your ingredients. This recipe moves quickly and it’s nice to be prepared for the next steps.
2. Make the Rice Krispie Base
Take about ½ cup of the mini marshmallows and mix in with the dry Rice Krispies in a large bowl. In a large pot, melt the butter over low heat. Add the marshmallows and stir until smooth. Mix in the vanilla, then remove from heat. Pour the mixture into the Rice Krispies and quickly stir until evenly coated.
3. Roll It Out
Have a small bowl of water ready to dip your fingers into so they don’t stick to the Rice Krispies. Lightly wet down your clean countertop and dump your warm Rice Krispie mixture on it. Shape it into an even rectangle (about ¾ -1 inch thick). Let it cool slightly but not completely—this helps it roll without cracking.
4. Toppings
Once the Rice Krispie layer is cool but still pliable, spread an even layer of peanut butter over the surface. In a microwave-safe bowl, combine the chocolate chips and coconut oil (or butter). Microwave in 30-second intervals, stirring between each, until smooth. Pour it on the peanut butter layer and smooth out. Sprinkle on your chopped Reese’s cups (or any kind of chocolate you want!)
5. Roll It Up
Moisten your hands with the water and start to lift an edge of the Rice Krispie treat, continue rolling, not too tightly, and squeeze it together gently as you go to help it stay together. Remember, keep dipping your hands in the water to prevent sticking!
6. Chill & Slice
Gently roll the log onto a large cutting board or cookie sheet and place it in the fridge for about 30 minutes-1 hour to set. Once it’s firm, slice it into 1-inch rounds and enjoy!
Tips & Variations
Sprinkle on chopped nuts or use any kind of candy or chocolate bar you want!
Make it festive by drizzling white or dark chocolate or colored icing on top of the rounds! Pink & Blue would be cute for a gender reveal party!
